I Cook, Therefore I Eat: Update Chilaquiles!

In a previous post, “I Cook, Therefore I Eat”, I came to the realization that I never take pictures of the Mexican dishes I make. Why? I guess because they just aren’t that exciting to me. Mexican food is my go-to, quick-fix, dining fare. It’s what I grew up with and what I’m most comfortable making.

For example, last night I wasn’t feeling that well. I didn’t want to slave over a stove, defrost meat, or actually have to pay attention to what I was doing. I just wanted dinner to magically appear. And it did, in the form of chilaquiles! Yum. Quick, easy, and oh so spicy!
